SDS and reducing agents denature proteins. When analyzed by reducing SDS-PAGE, multimeric proteins will lose their quaternary structure and run as individual monomers.

In SDS-PAGE, you can add an additional {{c2::reducing}} agent called {{c1::2-mercaptoethanol}} to {{c2::reduce}} disulfide bonds. This further denatures the protein.
Extra
SDS covers proteins in a net negative charge. The addition of 2-mercaptoethanol reduces disulfide bonds, and boiling is used to further denature proteins. 
Proteins migrate in the gel according to their mass.
